Quick Broccoli Alfredo
When you need something quick and easy, this is your ticket. You can use whatever pasta you like. We just happened to have macaroni lying around.
Ingredients
2 cup(s) broccoli (chopped)
2 clove(s) garlic (peeled & pressed)
1 Tbsp lemon juice
16 oz whole wheat pasta (any style)
½ cup(s) cashews (raw)
1 ¼ cup(s) soy milk (unsweetened)
2 Tbsp Earth Balance Buttery Spread
2 tsp Dijon mustard
3 Tbsp liquid aminos
1 Tbsp tahini
¼ cup nutritional yeast
½ tsp paprika
1 pinch nutmeg
1 pinch dulse
black pepper (to taste)
(don’t forget your greens)
Optional (1 breast chicken)
Instructions
- Gather your stuff.
- Cook pasta as per instructions on package. Bring another pot of water to boil for the broccoli.
- Measure and prepare all ingredients (except broccoli) and place in your blender.
- Blend until smooth and set aside.
- Chop broccoli and steam for a about 5 min or so.
- Drain cooked pasta.
- Chop steamed broccoli into smaller pieces.
- Add broccoli and sauce to the pasta. Mix well.
- Serve immediately with a large side salad.
