Pita Pizza
Having quick healthier alternatives to pizza is never a bad thing. Here is a quick and easy one that tastes great! Give it a whirl when you are in a hurry!
Ingredients
1 cup arugula
1 cup basil (chopped)
1 regular red bell pepper (sliced)
½ regular red onion (sliced)
3 regular tomatoes (thinly sliced)
¾ cup mozzarella cheese (or vegan cheese) (grated)
whole wheat pitas (4)
1 Tbsp Balsamic vinegar
Black pepper (to taste)
Red pepper (to taste)
Instructions
- Gather your ingredients and preheat oven to 425.
- Slice the red onion and bell pepper.
- In a large skillet over medium heat, sauté onion and bell pepper until tender (about 6-8 min).
- Prepare the remaining ingredients: slice tomatoes, grate cheese, chop basil, lay out arugula and pitas.
- In a large bowl, mix the arugula, basil, balsamic and set aside.
- Layer each pita with: tomatoes, cheese, and grilled onions & peppers.
- Bake on baking sheet for about 10 min or until cheese is melted (keep an eye on them so they do not burn).
- Top each pita pizza with the arugula & basil mixture and season with black pepper and red pepper (to taste).
- Serve with green salad.
