Pesto Pasta w/Roasted Cauliflower
Pesto is a good thing to know how to make and it is so easy. This roasted cauliflower goes with anything! It is really good (and I don’t even like cauliflower)!
Ingredients
2 cups basil (chopped)
1 head cauliflower (chopped)
3 cloves garlic (peeled & pressed)
1 package whole wheat penne pasta
¼ cup pine nuts (or raw almonds)
coconut oil
½ cup olive oil
2 Tbsp nutritional yeast flakes
black pepper
1 pinch cayenne
red pepper
Instructions
- Put chopped cauliflower in baking dish and drizzle with about 2 Tbsp of coconut oil (you will have to heat oil in the microwave for 20 sec or so in order to drizzle it).
- Season with black pepper and red pepper flakes.
- Bake at 450 for 35 min.
- Put basil, pine nuts, garlic, nutritional yeast, cayenne into your blender (or food processor) and pulse/blend slow until all the large chucks are ground,then slowly pour in the olive oil and blend until the pesto is the consistency that you like.
- Cook pasta as per bag instructions.
- Drain pasta and combine with the pesto (we usually use about half or less), but you can combine to your own taste (the remainder you can save to use one something else or it also freezes well for next time).

We just had this for a late Saturday lunch and it was a hit! My daughter went back for seconds on both things. My husband liked the cauliflower and he was surprised because he doesn’t like cauliflower. Plus it was very filling. I added a few sliced apples to my daughters plate to give a sweet side to the meal. Delicious….

Great idea adding the apple slices. I don’t really like cauliflower either, but I love it cooked like this!

Tinkyada makes a really great brown rice pasta that you could substitute for the whole wheat.

Love the idea of adding tomatoes. We liked this dish a LOT. I liked it better fresh, not so much left over. Maybe next time I’ll try re-heating leftovers in the oven rather than in a skillet or microwave. Yummy though!
What do you think about the quinoa/corn pastas?
We love the quinoa pasta and think it is a great option!
