Nacho Pizza

Come on now!?! Do I really need to write a description here? I don’t know about you, but whenever I see the name of this recipe that “Hallelujah” music goes off in my head. I love nachos and I love pizza, but put them together and that is just…I don’t know, almost wrong in a way. This is just the starting point for this recipe; there are a lot of ways you can take this baby! Enjoy!

Ingredients

1 regular red bell pepper (diced)

3 cloves garlic (peeled & pressed)

1 small jalapeño (diced)

4 regular green onion (diced)

1/2 regular red onion (diced)

2 regular tomatoes (diced)

1 15 oz can black beans (drained & rinsed)

¼ cup(s) black olives (sliced)

whole wheat pizza dough (prepared as per package)

1 cup pepper jack (or vegan) cheese (shredded)

Corn meal

1 Tbsp chili powder

Instructions

  1. Gather your ingredients.
  2. Prepare dough as per package. Pre-heat oven to 400.
  3. Chop, measure and prepare all ingredients.
  4. Over medum-high heat sauté ½ of the chopped bell peppers until tender (about 4-5 min).
  5. Add the following to your food processor (or Vita-Mix), black beans, ½ of your chopped tomatoes, garlic, chili powder, dulse, and your sautéed bell pepper. Mix until smooth.
  6. Over medium-high heat, lightly sauté the remaining bell pepper, jalapeño, and red onion (about 2-3 min)
  7. Spread corn meal over your pizza stone (or dish) and prepare your dough.
  8. Top dough with bean mixture (as you would with pizza sauce).
  9. Top remaining chopped tomatoes, and then the sautéed bell pepper, jalapeño, and red onions.
  10. Sprinkle cheese, olives and green onion.
  11. Bake for 8-10 min or until cheese is melted.
  12. Serve with green salad.
