Miso Soup
I like soup with substance. This version of Miso Soup is light, but the pasta and tofu give it some great substance.
Ingredients
2 cups spinach
3 regular green onions (thinly sliced)
5 Tbsp miso paste
½ block firm tofu (chopped into 1/3 inch cubes)
1 package 8 oz soba noodles (cooked)
red pepper (to taste)
Instructions
- Gather your ingredients
- Prepare your ingredients
- Cook pasta as per package instructions. When done, rinse well with cold water and set aside.
- In medium sauce pan, bring 5 cups of water to a boil. Reduce heat and simmer.
- Add some of the boiling water to a bowl with the miso paste and mix with a spoon.
- Slowly add to boiling water until you get to the taste you like.
- Add tofu and spinach to sauce pan and turn off heat and let set for a few minutes.
- Add a little pasta to each bowl, top with some soup, green onion, and red pepper (to taste).
