Mexican Stir Fry

Need something that tastes great and is fast and easy? Then, look no further. This one is really good – give it a try! It also makes a great fallback meal as you should most of these ingredients on hand.


2 large avocados (sliced)

1 regular red bell pepper (sliced)

1 regular green bell pepper (sliced)

3 cloves garlic (peeled & pressed)

1 regular yellow onion (sliced)

4 regular green onions (diced)

2 large tomatoes (diced)

2 15 oz cans pinto beans (drained and rinsed)


black pepper (to taste)

½ tsp chili powder

½ tsp cumin

dulse (to taste)

red pepper (to taste)


  1. Gather your ingredients.
  2. Dice tomatoes and green onions. Slice bell peppers, onion and peel garlic.
  3. In large skillet, cook garlic and yellow onion over medium heat for 3-5 min.
  4. Add bell peppers to skillet and cook an additional 3 min.
  5. Add tomatoes and green onions and cook for another 3 min.
  6. While veggies are cooking, drain & rinse beans. Measure spices and slice avocado.
  7. Add beans and spices to skillet, stir and heat until beans are warmed.
  8. Serve topped with avocado slices, salsa and green salad.
