Need something that tastes great and is fast and easy? Then, look no further. This one is really good – give it a try! It also makes a great fallback meal as you should most of these ingredients on hand.
Ingredients
2 large avocados (sliced)
1 regular red bell pepper (sliced)
1 regular green bell pepper (sliced)
3 cloves garlic (peeled & pressed)
1 regular yellow onion (sliced)
4 regular green onions (diced)
2 large tomatoes (diced)
2 15 oz cans pinto beans (drained and rinsed)
salsa
black pepper (to taste)
½ tsp chili powder
½ tsp cumin
dulse (to taste)
red pepper (to taste)
Instructions
- Gather your ingredients.
- Dice tomatoes and green onions. Slice bell peppers, onion and peel garlic.
- In large skillet, cook garlic and yellow onion over medium heat for 3-5 min.
- Add bell peppers to skillet and cook an additional 3 min.
- Add tomatoes and green onions and cook for another 3 min.
- While veggies are cooking, drain & rinse beans. Measure spices and slice avocado.
- Add beans and spices to skillet, stir and heat until beans are warmed.
- Serve topped with avocado slices, salsa and green salad.
