This is a quick and easy stew recipe. It is similar to chili but with a lot less beans and more veggies.
Ingredients
2 cloves garlic (pressed)
1 regular green onion (chopped)
1 regular yellow onion (chopped)
2 large tomatoes (diced)
1 cup corn (frozen)
2 cup summer squash (cut into small cubes)
2 cup vegetable broth (low-sodium)
1 15 oz can black beans (drained and rinsed)
1 cup salsa
unsweetened greek yogurt (or unsweetened coconut yogurt)
1 Tbsp chili powder
1 Tbsp cumin
¼ tsp dulse
¼ tsp oregano
½ tsp paprika
¼ tsp red pepper
cheese (optional)
½ lb ground turkey (optional)
Instructions
- Sauté onion and garlic until onion is translucent.
- Add all spices, salsa, beans, vegetables, broth and bring to boil.
- Reduce heat and simmer, covered, stirring occasionally (about 20-30 min).
- Top with green onion, greek yogurt and cheese (optional).
