Messy Joe’s
Now who doesn’t like a good sloppy joe? Here is one version we love in our house.
Ingredients
1 regular green bell pepper (diced)
2 cloves garlic (peeled & pressed)
1 regular yellow onion (diced)
Ezekiel buns (sprouted grain)
1 8 oz can tomato sauce
1/4 cup tomato paste
1 cup green lentils
3 Tbsp maple syrup (sugar free)
1 Tbsp mustard (yellow)
1 Tbsp coconut oil
3 Tbsp chili powder
1 1/2 tsp oregano
1 tsp dulse (optional)
Instructions
- Add the lentils and 4 cups of water in a small sauce pan, cover and bring to a boil. Once boiling, lower heat and simmer for about 20 minutes, until lentils are soft. Drain and set aside.
- About 10 minutes before the lentils are done – in a soup pot over medium heat, saute the onion and pepper in the oil for about 7 minutes.
- Add the garlic and saute 1 minute more.
- Stir in the cooked lentils, the chili powder, oregano, dulse, tomato sauce and tomato paste. Cook for about 10 minutes.
- Stir in the maple syrup and mustard and heat thoroughly (about 2-3 minutes)
- Turn the heat off and let sit for about 10 minutes, so that the flavors can shmeld together. We like to serve on a Ezekiel English Muffin (or bun) or in a whole wheat pita pocket or just slopped on a plate with a big salad on the side.

I added about 1/2 cup finely chopped walnuts to the mixture. I really like chopped walnuts in my fake-meat mixtures. They work really well.

Great idea!
Both my husband & I liked this very much. It was very filling.
