Lentils w/Caramelized Onions and Pitas
Caramelized onions, lentils, spices! This recipe has great flavors and lots of good stuff.
Ingredients
3 large yellow onions (sliced into thin half moons)
1 cup brown rice
1 cup lentils (red)
whole wheat pitas (4)
1 stick cinnamon
coconut oil spray
½ tsp allspice
1 ½ tsp cumin
Instructions
- Gather your ingredients and pre-heat oven to 400.
- Slice your onions.
- Lightly spray high edge baking pan with coconut oil.
- Place onions into pan and lightly spray the onions with coconut oil.
- Place in oven and roast until the onions are browned (about 30-50 min depending on your oven). Stir them about every 10 min or so. When done remove and set aside.
- Add 4 cups of water to a pot and bring water to boil.
- Add rice, cinnamon stick, cumin, and allspice to the pot. Bring back to boil then reduce heat and simmer for about 15 min.
- While the rice is simmering. Cut the pita bread in half and separate.
- Place on baking sheet and bake at 350 for 10-15 min (keep an eye on them so they do not burn)
- Once rice is done simmering. Add lentils and gently stir. Cover, bring to boil. Reduce heat and simmer on low until liquid is absorbed (about 30 min).
- Remove rice and lentils from heat, cover and set aside for 10 min.
- Serve onions on top of rice and lentils with green salad and pita.
