Lentil and Quinoa Arugula Salad

Lentil and Quinoa Arugula Salad

This salad is filled with a lot of foods that will make you actually feel really good after you eat them. This would make a great pre-workout meal.

Ingredients

5 oz arugula

2 cups cherry tomato(es) (halved)

1/3 cup pumpkin seeds (raw)

¾ cup lentils (green) (cooked as per package)

1 cup quinoa (cooked as per package)

1 tsp balsamic

2 Tbsp red wine vinegar

¼ tsp dulse

½ tsp black pepper

pesto

2 oz basil (fresh) (chopped)

4 cloves garlic (peeled & pressed)

1 large lemon (juiced)

¼ cup pine nuts (raw)

2 Tbsp olive oil (optional – I left out)

¼ tsp dulse

4 Tbsp water

Instructions

  1. Gather your ingredients.
  2. Cook lentils and quinoa as per package. After cooked, set aside and let cool.
  3. Prepare and measure pesto ingredients.
  4. Place all pesto ingredients into your VitaMixer (blender) and blend well.
  5. Remove pesto from blender into a small bowl. Add red wine vinegar, balsamic, dulse, and black pepper to pesto and stir. Set aside.
  6. Rinse arugula and cut tomato(es).
  7. Add arugula and tomato(es) into large bowl.
  8. Add quinoa, rinsed lentils, and pesto to arugula and tomato(es) and mix well.
  9. Add pumpkin seeds and give it one last stir and serve.
