Huevos Rancheros

Huevos Rancheros

Here is a fun version of breakfast you can have any time – a healthy version of Huevos Rancheros. (Don’t worry if someone does not like fried eggs; there is a scrambled option. Or you can skip the egg altogether! Still good!)

Ingredients

2 large avocados (peeled and sliced)

8 large eggs

8 regular Ezekiel corn tortillas

Beans

2 15 oz cans black beans (drained and rinsed)

1 cup veggie broth (low sodium)

3 whole bay leaves

Salsa

¼ bunch cilantro (finely chopped)

1 small jalapeño (seeded and finely diced)

1 large lime (juiced)

½ regular red onion (diced)

2 regular tomatoes (diced)

Instructions

  1. Gather all your ingredients.
  2. Measure and prepare all the bean ingredients.
  3. Place all bean ingredients in large sauce pan and cook over medium-low heat for about 10-15 min.
  4. Measure and prepare all your salsa ingredients.
  5. Place all salsa ingredients in a large mixing bowl.
  6. Stir salsa well. Set aside.
  7. Slice your avocado. Gather your tortillas and eggs. Pre heat oven to warm and place a baking sheet in the oven.
  8. Over medium heat, place one tortilla in a small non-stick pan. Heat for about 1 min and flip the tortilla.
  9. Crack one egg on top of the tortilla and cook until egg turns white. Flip and cook to the consistency you like your yolks. Place each one into the oven on the baking sheet.
  10. Once you have all them cooked, you can top each with salsa, avocado, and beans on the side.
