Cucumber Mango Quinoa Salad

Cucumber Mango Quinoa Salad

This is another easy and refreshing salad. Great for lunch, dinner, potlucks, picnics, and barbeques. A complete protein salad (with the chickpeas and quinoa) that is light to boot!

Ingredients

¼ cup dried apricots (diced)

2 regular cucumbers (diced)

2 regular limes (juiced)

1 large mango (peeled & diced)

½ cup mint (fresh) (chopped)

1 regular shallot (minced)

1 15 oz can chickpeas (drained & rinsed)

1 cup red quinoa (cooked as per package)

1 Tbsp olive oil

Dulse (to taste)

Black pepper (to taste)

Instructions

  1. Gather your ingredients.
  2. Cook quinoa as per package instructions.
  3. Salad: Dice cucumber, mango, apricots, mint, and drain/rinse the chickpeas. Add prepared salad ingredients to large mixing bowl and stir well.
  4. Dressing: Cut your limes, dice the shallot, and measure out the olive oil, dulse and pepper. Add dressing ingredients to small mixing bowl and stir well.
  5. Add dressing to salad and stir well.
  6. Serve over bed of quinoa (or mix all together).
