Chickpea Salad Wrap
Here is a quick and easy one for those nights when you do not have a lot of time. Great for lunch, too!
Ingredients
1 stalk celery (diced)
1 regular lime (juiced)
4 leaves lettuce (chopped)
1 cup grapes (halved)
1 15 oz can chickpeas (drained & rinsed)
¾ cup walnuts (raw) (chopped)
4 large Ezekiel tortillas
¼ cup vegan mayonnaise
1 tsp rice vinegar
black pepper (to taste)
dulse (to taste)
1 breast chicken (cooked and chopped) (optional)
Instructions
- Prepare and measure out all ingredients.
- Place all ingredients (except for lettuce) in a bowl and stir well.
- Serve with lettuce in tortilla.
