Chickpea Casserole
This is a fast and easy casserole that tastes great! (This is great leftover as well.)
Ingredients
1 head broccoli (chopped)
3 large carrots (grated)
1 regular yellow onion (thinly sliced)
3 regular green onions (chopped)
3 15 oz cans chickpeas (drained and rinsed)
½ cup bread crumb(s)
1 cup veggie broth (low sodium)
Coconut oil spray
1 tsp dulse
Instructions
- Gather all your ingredients and preheat oven to 350.
- Measure and prepare all your ingredients.
- Place garbanzo beans and veggie broth in a large bowl and smash with masher until smooth.
- Add carrots, broccoli, and onions (yellow and green) to bowl and mix well.
- Add bread crumbs and dulse to bowl and mix well.
- Lightly spray large baking dish with coconut oil.
- Place beans and veggies into dish and pack down with a large spoon.
- Cover with foil and bake for about 45 min. You have some time here, so this is a great time to update your facebook status or clean some dishes or just kick your feet up.
- Remove foil and bake for an additional 15 min.
- Serve immediately with a green salad.
