Cajun Black Bean Soup
Here is a quick, easy, simple recipe with lots of flavor (and a little heat).
Ingredients
¼ cup cilantro (chopped)
4 cloves garlic (peeled and pressed)
1 large lime (cut into wedges)
1 medium red onion (chopped)
2 15 oz cans black beans
2 cups veggie stalk (low sodium)
2 Tbsp apple cider vinegar
1 tsp cayenne
2 tsp cumin
1 lbs ground turkey or side meat (optional)
Instructions
- Gather your ingredients.
- Chop cilantro and onion. Peel garlic. Measure out spices and veggie stalk. Rinse beans.
- In a large sauce pan, sauté the onion and garlic over medium heat until the onion becomes translucent (about 4 min).
- Add 1 ½ cup of water, cilantro (save a little to garnish), beans, spices, and veggie stalk. Heat to a boil. Reduce heat to medium-low and cook covered for about 20 min.
- While that is cooking, you can slice your lime.
- Place ½ the soup into your VitaMix (or food processor) and blend until smooth.
- Return to sauce pan and add 2 Tbsp of apple cider vinegar and cook covered for another few minutes.
- Serve topped with cilantro. lime wedge, and salad.
