Caesar Salad

Caesar Salad

At one point in my life, I did a lot of traveling for work. One of my default meals for lunch was Caesar salad. I think I have had Caesar Salad in every state from California to New York and all the way through Canada. Salads are a great option, but where salads can become unhealthy is the salad dressing. Here is a healthy version of this favorite.

Ingredients

Dressing

3 Tbsp lemon juice

4 cloves garlic (peeled and pressed)

1/3 cup almonds (raw)

2 Tbsp capers

¾ lbs silken tofu

1 tsp xylitol

½ tsp mustard (powder)

Croutons

1 loaf Ezekiel Bread

coconut spray

garlic powder

sage

Salad

1 head lettuce (romaine) (chopped)

4 large eggs (hard-boiled)

parmesan cheese

black pepper

Instructions

  1. Gather your stuff. Hard boil your eggs (I just put eggs in water and cook on high for 25 min).
  2. Prepare your dressing ingredients.
  3. Add the almonds to your food processor and pulse until the almonds are crumbled and set them aside in a bowl.
  4. Add the rest of the dressing ingredients and pulse until blended.
  5. Add the almonds back into the dressing and pulse until blended.
  6. Place dressing in a air-tight container and refrigerate.
  7. Pre-heat oven to 400 degrees.
  8. Cut your bread into cubes (the size croutons) and place them in a large baking pan.
  9. Spray them in the pan with coconut oil. Stir and spray so that all sides are covered.
  10. Season the croutons with garlic powder and sage.
  11. Bake tossing about every 5 minutes for 20 minutes. NOTE: Time will vary so just keep an eye on them so they don’t burn.
  12. While the croutons are baking, chop the lettuce and slice your eggs.
  13. When croutons are done (remove and set aside). Spoon 2-4 tablespoons of dressing into your salad bowl and toss until coated the way you like it (you will have leftover dressing to use again in the future). Top with croutons, parmesan, and eggs and serve right away.

    Made this one again tonight. We made it Vegan style. Swapped eggs with avocado and left off the cheese. Also we did not use spray oil on the croutons and they we could not even tell the difference.

    I loved the salad, only I wished there were more of some kind of flavor to the dressing. What suggestions do you have? I like the idea of using avocado instead of egg. I love love loved the croutons by the way.
