Broccoli Pesto Linguine w/Bean Balls

Broccoli Pesto Linguine w/Bean Balls

This is a nice way to get some broccoli into your dinner without even noticing. This meal is really good leftover, too. So if you are lucky enough to have leftovers you will be having a great lunch tomorrow.

Ingredients

Broccoli Pesto and Linguine

1 bunch baby broccoli (stems removed)

2 cloves garlic (peeled & pressed)

1 lbs linguine (whole wheat)

1/3 cup pine nuts (raw)

1/3 cup parmesan cheese (grated)

1/3 cup olive oil (extra-virgin)

¼ tsps red pepper

Bean Balls

2 cloves garlic (peeled and pressed)

¼ tsp lemon (zested)

2 15 oz cans kidney beans (drained and rinsed)

2 Tbsp tomato paste

½ cup whole wheat bread crumbs

¼ cup nutritional yeast

2 Tbsp liquid amino

1 Tbsp coconut oil

½ tsp oregano

¼ tsp thyme

Optional (1/2 lbs ground turkey)

Instructions

    Bean Balls
  1. Gather your ingredients and pre-heat oven to 375.
  2. Measure and prepare all the bean ball ingredients.
  3. Place beans in large bowl and mash with potato masher until most beans are mashed.
  4. Add the remaining bean ball ingredients and mix well with a fork.
  5. Spray a baking sheet and spray with coconut oil and form your bean mixture into small balls (about the size of a walnut). Place them on the baking sheet.
  6. Spray bean balls with coconut oil and bake for 15 min and flip over and cook for another 10 min (or until they look done).
  7. Broccoli Pesto Linguine
  8. Boil large pot of water for pasta. Cook pasta as per instructions.
  9. Boil a pot of water to blanch the broccoli.
  10. While water is heating up. Gather and measure your ingredients for the broccoli pesto.
  11. Prepare a large bowl of ice water to cool the broccoli.
  12. Once water is boiling place broccoli in for about 2 min.
  13. Remove broccoli and place in ice water until cool.
  14. Add all pesto ingredients into food processor (or VitaMix) and mix well.
  15. Slowly add the olive oil and mix until smooth.
  16. Drain your cooked pasta and return to pot.
  17. Add pesto to pasta and mix well.
  18. Add bean balls to pasta and gently stir (or serve balls on top of pasta).
  19. Top with fresh grated parmesan and serve immediately with a side salad.
