Let me start by saying, I am not a big fan of beets. But I have to say, after cooking a few recipes with beets, I don’t think I can say that I do not like beets anymore. I guess when they are cooked right, I do like them Sam I Am! This recipe came from a good friend. We tried them and loved them! We think you will, too! (Oh, they are even better leftover the next day for lunch!)
Ingredients
3 large beets (diced)
4 cloves garlic (peeled & pressed)
1 large lemon (juiced)
1 yellow onion (diced)
1 medium pablano pepper (seeded & diced)
3 Tbsp parsley (finely chopped)
4 Ezekiel English Muffins (or hamburger buns)
1 can black beans (drained & rinsed)
½ cup brown rice (uncooked)
¼ cup whole wheat flour
2 Tbsp coconut oil
2 Tbsp apple cider vinegar
1 tsp coriander
2 tsp cayenne
Dulse
Black pepper
1 large avocado (topping – peeled & sliced)
2 leaves lettuce (topping – chopped)
1 red onion (topping – sliced)
1 large tomato (topping – sliced)
2 large sweet potatoes (thinly cut long ways)
Coconut oil (or spray)
Cajun spice (to taste)
Instructions
- Gather your ingredients.
- Pre-heat oven to 450. Rinse and cut sweet potatoes into fry-like pieces.
- Lightly oil baking sheet with coconut oil. Spread potatoes on cooking sheet and lightly spray with coconut oil and season with Cajun spice (or any spices you like)
- Bake for 15 min then flip and bake for another 10 or 15 min.
- Prepare all your toppings, buns and set aside.
- Prepare and measure all your burger ingredients.
- Cook rice as per package instructions.
- In large pot (over medium-high heat), add garlic, onions, and poblano pepper. Cook until onions are translucent (about 4 min).
- Add beets to pot with (garlic, onion, poblano) and cook covered until beets are soft (about 20 min). You will want to stir frequently.
- While the beets are cooking, in a large mixing bowl, add cooked rice, lemon juice, black beans, parsley, coriander, cayenne, black pepper, and dulse. Stir and set aside.
- For the last minute of cooking the beets, add in the apple cider vinegar.
- Add the beet mixture into the mixing bowl with the rice and bean mixture.
- Mash beet, rice, and bean mixture until adding the whole wheat flour in until you get to a nice burger like consistency.
- Form into 6 patties.
- In large skillet, heat coconut oil over medium-high heat, cook patties until well done (about 5-7 min per side).
- Decorate as you like and serve with green salad.
